What Are Natural Sesame Seeds?
Upon harvest, sesame seeds remain embedded in their seed coat, also known as a “hull.” Most sesame seeds sold in North America are sold “hulled” without the seed coating. Unhulled sesame seeds are consumed in Japan and are growing in popularity among natural food enthusiasts in the United States. Unhulled seeds have a crunchier texture compared with hulled seeds and may have a slightly more bitter flavor. For that reason, when baking something sweet that calls for sesame seeds, it’s best to use hulled seeds.
